Water Activity (aw Value): Key Parameter for Product Safety and Shelf Life

Water activity (aw value) is a central parameter for assessing the shelf life, product safety and microbiological stability of products in the food, cosmetics and pharmaceutical industries. Unlike moisture content, the aw value does not describe the total amount of water in a product, but rather the thermodynamic availability of water, meaning the proportion that is actually available for microbiological, chemical and physical processes.

Water activity therefore provides crucial information on whether and to what extent a product is susceptible to microbial growth or quality-relevant changes. Systematically taking the aw value into account makes it possible to identify risks early, increase product stability and optimise development and production processes.


What is the aw value?

The aw value describes the ratio of the water vapour partial pressure above a product to the water vapour pressure of pure water at the same temperature. It is a dimensionless quantity between 0 and 1.

The lower the aw value, the lower the availability of water for microbiological processes. Products with low water activity are generally more stable and less susceptible to spoilage.

Most pathogenic bacteria cease growth below an aw value of approximately 0.90. Yeasts and moulds have a lower water requirement, but below an aw value of approximately 0.60, microbial growth is virtually excluded. However, since a low aw value merely inhibits proliferation while the organisms and in particular their spores remain viable, it does not replace microbiological testing for actual contamination levels. As water activity increases, the risk of microbiological growth rises accordingly.

Beyond the microbiological aspect, water activity also influences chemical and physical stability. This includes oxidation reactions, enzymatic processes and structure-altering effects such as clumping or texture changes. The relationship is not always linear and depends strongly on the respective product matrix.


Significance of water activity for shelf life and product safety

Determining the aw value enables targeted control of stability and product safety, independent of moisture content alone. While moisture content describes the total amount of water, water activity is the decisive factor in whether that water is actually available for reactions and microbial growth.

In practice, the aw value is used to:

  • assess the risk of microbial contamination and proliferation
  • optimise formulations for stability
  • use preservation systems more efficiently
  • underpin shelf life strategies on a scientific basis

Water activity is therefore an important parameter in product development, quality assurance and industrial process control.


Influencing factors and typical challenges

Water activity is not determined solely by moisture content but is significantly influenced by product composition and structure. Soluble ingredients such as sugars, salts or polyols bind water to varying degrees and thereby alter water availability.

Moreover, identical moisture contents in different products can lead to markedly different aw values. In many cases, this makes water activity a more meaningful parameter for assessing microbiological stability than moisture content alone.

A particular challenge lies in the interpretation of measurement results. These should always be considered in the context of the formulation, the physical structure and the intended application. Only in this way can robust conclusions on product safety and shelf life be drawn.

How we determine the aw value in the laboratory

Precise analytics are essential for reliable and comparable results. The aw value is determined under strictly defined conditions, in particular at constant temperature and in a controlled environment. This is necessary because water activity is temperature-dependent.

Equally important is standardised sample preparation. Inhomogeneous or complex product matrices can influence the measurement result, making representative sampling and careful preparation essential for reliable results.

The aw value is a central metric for assessing microbiological stability, chemical reaction processes and physical product properties. It enables a differentiated evaluation of actual water availability and thereby provides an important foundation for the development of safe and long-lasting products.

Through the targeted use of water activity, risks can be minimised, formulations optimised and quality systems substantiated on a scientific basis. The aw value is an indispensable parameter in modern product development and quality assurance.
